白菜要先加盐并挤掉水分,然后和肉一块拌。

Almost the former. Put the salt later. Mix the meat with soy sauce, cooking alcohol, and smashed green onion(CONG1) , ginger first.

先用水打肉馅,加姜葱末,料酒,香油。。。如果懒得挤白菜的水,就打肉馅时候少放水,免得最后馅特别稀。等肉馅搅拌均匀而且比较粘以后,放白菜。搅呀搅搅呀搅,最后根据稀稠度,觉得加酱油还是盐。

不论是什么馅的,一定要先把肉馅办好,不能放水在里面的,然后在准备包的时候放白菜馅,不然的话白菜下的水特别多!
