枫下家园 / 美食天地 / 我发面包包子的小窍门:按照2份all purpose flour比1.5份cake and pastry flour的比例和面即可。cake and pastry flour在bulk food的店里有的卖。我妈不喜欢吃用all purpose flour做出来的包子,她觉得面太筋,象嚼牛皮糖,不好吃。加了cake and pastry flour以后的包子面皮吃起来比较松软、暄腾。而且发好就包,包好就蒸,蒸好就揭锅开吃,不用左等右放的。:-)
