Beware of Canola Oil, Canola Oil is an Industrial Oil, Not Fit For Human Consumption

Rapeseed is a lubricating oil used by small industry. It has never been meant for human consumption.
It is derived from the mustard family and is considered a toxic and poisonous weed, which when processed, becomes rancid very quickly.
It has been shown to cause lung cancer (Wall Street Journal: 6/7/95)
It is very inexpensive to grow and harvest. Insects won't eat it.
Some typical and possible side effects include loss of vision, disruption of the central nervous system, respiratory illness, anemia, constipation, increased incidence of heart disease and cancer, low birth weights in infants and irritability.
Generally rapeseed has a cumulative effect, taking almost 10 years before symptoms begin to manifest. It has a tendency to inhibit proper metabolism of foods and prohibits normal enzyme function. Canola is a Trans Fatty Acid, which has shown to have a direct link to cancer. These Trans Fatty acids are labeled as hydrogenated or partially hydrogenated oils. Avoid all of them!

        一、双低油菜概念及其发展

        本世纪60年代前,菜籽油中有一种叫芥酸的物质含量很高。在动物饲喂试验中发现,芥酸会在试验动物的心肌组织中贮集,并造成组织损伤,由此营养学家对菜籽油的营养价值提出了质疑。育种学家提出了降低油菜籽中芥酸含量的研究计划。随着低芥酸源品种(Liho)的发现(Stefansson 1964),降低油菜芥酸含量的育种计划首先在加拿大,然后在欧洲逐步建立起来。我国于1978年起开始引进低芥酸油菜,80年代初设立了低芥酸油菜育种国家攻关计划,培育了一批低芥酸油菜品种。

        普通油菜菜籽榨油后的饼粕中含硫代葡萄糖苷(简称硫苷),其水解产物腈、恶唑烷硫酮和异硫氰酸盐对牲畜有极强毒性。因此,长期以来菜粕中的蛋白质不能被有效利用。自1969年波兰育种家Krzymanski发现低硫苷含量种质Bronowski后,降低硫苷含量的研究在世界范围内开展起来。因此油菜双低(即低芥酸、低硫苷)品质成为世界油菜主产国的重要研究和生产目标。

        加拿大是世界双低油菜生产的先驱者,70年代中期便实现油菜品种双低化。目前加拿大双低油菜(Canola)仍然垄断国际油菜产品市场。欧洲亦于80年代中期实现油菜品种双低化和规模化发展。我国油菜双低育种起步于20世纪70年代中期,目前尚处于非优质品种向双低品种的过渡期。据统计,2001年夏收双低油菜面积占60%左右。由于生产上普通油菜和双低油菜插花种植等原因,我国人民食用菜籽油品质长期得不到提高。

        二、双低菜籽油概念及其营养特性

        (一)双低菜籽油概念

        双低油菜的菜籽榨出的油称为双低菜籽油。双低菜籽油的主要特征是:饱和脂肪酸含量低,单烯不饱和脂肪酸(主要为油酸)含量较高,多烯不饱和脂肪酸(主要为亚油酸、亚麻酸)含量中等,而且Ω6和Ω3(两种重要的脂肪酸)的含量比例合理。

        (二)双低菜籽油的营养特性

        1.双低菜籽油与血液胆固醇含量

        以前的研究表明,多烯不饱和脂肪酸(PUFA)可降低血液胆固醇含量。现在很多研究表明,单烯不饱和脂肪酸(MUFA)在降低血液胆固醇含量方面与多烯不饱和脂肪酸具有同样效果,所以以橄榄油(单烯不饱和脂肪酸含量非常高)为主要食用油的居民较少患由血液胆固醇高引起的疾病。双低菜籽油中单烯不饱和脂肪酸和多烯不饱和脂肪酸含量远远大于动物油;与其它蔬菜油相比,双低菜籽油中单烯不饱和脂肪酸的含量较高,多烯不饱和脂肪酸含量居中。因此食用双低菜籽油可降低血液胆固醇含量。许多研究者用双低菜籽油替代脂肪进行饮食试验,均得到上述相同的结论。

        需要注意的是,为制造人造黄油和煎炸油,必须进行氢化(硬化)处理。在油的固化过程中会产生游离脂肪酸,它象饱和饱和脂肪酸一样,会增加血液胆固醇含量。

        2.双低菜籽油与心血管疾病

        由以下三个主要因素造成:一是血管内膜形成粥样硬化,从而降低血管的腔室体积;二是血管管道堵塞,形成凝结,直接导致冠心病或休克;三是心律不齐,即心肌不协调地收缩导致心脏不规则或无力跳动,在有些情况下导致死亡。

        血液中低密度脂蛋白的氧化可增加动脉硬化,多烯不饱和脂肪酸和单烯不饱和脂肪酸均可防止低密度脂蛋白的氧化,而且越来越多的证据表明,单烯不饱和脂肪酸效果比多烯不饱和脂肪酸更好。维生素E也可防止低密度脂蛋白的氧化,而双低菜籽油维生素E的含量是玉米油和大豆油的2倍。

        双低菜籽油中的亚麻酸在人体内可转化为Ω3脂肪酸,即EPA和DHA(又称脑黄金)。研究发现Ω3脂肪酸可形成类荷尔蒙物质,可以抑制血凝块的形成。丹麦人和格陵兰爱吉思摩人尽管食用大量脂肪,但心血管疾病发生率很低,主要是因为他们大量食用鱼油,而鱼油中Ω3脂肪酸含量很丰富。然而也有人提出了相反的观点,这可能与饮食中Ω3脂肪酸和Ω6脂肪酸平衡有关。有些研究者认为Ω3脂肪酸和Ω6脂肪酸的合理比理为2-3:1,双低菜籽油中Ω3脂肪酸和Ω6脂肪酸的比理为2:1。此外Chan等发现,血液和血小板脂肪酸组成随着饮食中亚麻酸含量以及它与亚油酸的比率不同而变化。

        用富含Ω3脂肪酸的食物喂饲小白鼠,试验结果表明Ω3脂肪酸可避免心脏心律不齐。用富含Ω6脂肪酸的向日葵油喂饲小白鼠的试验结果表明亦可预防心脏心律不齐。由于双低菜籽油中的油酸和亚油酸在人体和动物体内可转化为Ω6脂肪酸,因此用双低菜籽油、橄榄油、大豆油等喂饲动物,结果表明只有双低菜籽油可显著降低引发心脏心律不齐的各种因素。

        “地中海”饮食方式与“西方”饮食方式都是高脂肪酸饮食,“地中海”饮食方式中油酸含量很高,此外亚麻酸和亚油酸含量也较高。在以双低菜籽油为主的“地中海”饮食方式与“西方”饮食方式对心血管疾病影响的对比试验中,发现“地中海”饮食方式中有14种主要因素可导致心血管疾病,而“西方”饮食方式中则多达44种。

        由于人们担心肥胖等原因,许多人尽量选择低脂肪的食物。但越来越多的科学家研究认为,低脂肪的食物减低了满足生命需求的能量,也减少了有益脂肪的摄入量,长期下去对健康有害,尤其对儿童。因为脂肪是人体内重要的能源,如哺乳期婴儿所需能量的45%-50%来自脂肪。

          • 说出来不怕大家笑话。当年我进超市买油,canola这个字不认识,葵花子油总觉得不应该是做菜的,橄榄油太贵,就买了玉米油,一直到现在。
